The Christmas holidays are full of events with our friends and family, where food is one of the main protagonists. These meetings are characterized by having large amounts of food. Fish soup:

Fish soup is a traditional dish for these holidays and one of the low-calorie recipes.

Ingredients: 1 monkfish head. 300 gr. of clean monkfish. 1 head of hake. 4 slices of hake. 250 gr. of rings of squid. 230 gr. of clams. 350gr. of prawns. 4 carrots. 1 tomato. 1 leek 1 clove garlic. 1 pinch of cilantro. Soup paste (noodles). Extra virgin olive oil. Salt.

  • Prepare the fish broth. In a pot with water add the head and spine of the hake and monkfish, 2 carrots, leek. Cook it over low heat for 40 minutes. Then strain the heads and reserve the broth.

  • In a frying pan, pour a jet of olive oil and fry the sliced ​​garlic, leek and two carrots in small pieces. Brown the vegetables and add the peeled and chopped tomato. When everything is cooked, add a little broth and beat it with a shake.

  • Place a pot on the fire with the hake, squid, monkfish, all in pieces next to the prawns, add broth and once it boils add the pasta so that the soup is thicker.

  • Add the clams so that they open when there are two minutes left to turn off the heat.


Zucchini rolls stuffed with spinach:

This recipe is made up of thin slices of zucchini cooked on the grill forming rolls that are the base. It incorporates spinach, fresh cheese seasoned with basil, thyme, lime juice, a little olive oil, pepper and salt. It is one of the healthy and low-calorie recipes that is perfect as a starter for Christmas meals and dinners.


Carpaccio of salmon:

This recipe is very simple to prepare and the result is amazing. Ingredients: 600 gr. of fresh salmon. 8 tablespoons of virgin olive oil. 1 lemon. 1 teaspoon of pepper and salt.

  • Start by cutting the salmon into slices. To get thinner slices, place the salmon in the freezer for an hour.

  • In a bowl mix the lemon juice and oil, add pepper and salt.

  • Approximately half an hour before serving the dish at the table, dress the salmon slices and decorate it with a mixture of lettuce.
